Mexican for “little meats”, is simply small bits of well browned pork meat. It’s made of small cuts of pork meat that is simmered until tender, then finished by cooking the pieces slowly until nicely browned all over. We served our Carnitas with salsa and used them as the filling in tacos and enchiladas.

CARNITAS FRITAS Chunks of slow-cooked pork loin served with tomatillo sauce, sour cream, fresh sliced avocado, onions, pico de gallo, rice, borracho beans and tortillas.
CARNITAS A LA CUCOS Chunks of slow-cooked pork loin topped with Los Cucos special sauce made with tomatoes onions, mushrooms and butter sauce, served with (1) chicken fajita taco.
